Treat: Coconut bites

The nickname for these in my house is ‘home made bounties’ – and I guess thats what they are.
They are so easy to make and even easier to eat.

What you need…
100g dessicated coconut
50g finely chopped nuts (macadamnia nuts or pecans are great)
2 tbsp coconut oil
2 tbsp clear honey
1 tsp vanilla extract

25g dark chocolate
2 heaped tsp cocoa powder
2 tbsp coconut oil
50g dessicated coconut
15g finely chopped nuts

What you do…

  1. Tip the coconut, nuts, coconut oil, honey and vanilla extract into a processor and blitz
  2. Once the mixture is thick and combined (add a tiny bit more coconut oil and or honey if needed) tip into a bowl
  3. Firmly work the mixture in your hands into little balls. Be firm as the mixture is very crumbly!
  4. Put all the balls onto a baking tray lined with greaseproof paper and pop in the freezer for 15 mins to set
  5. For the coating melt the chocolate in the microwave then add to the food processor with the cocoa powder, coconut oils and the nuts and 1/3 of the coconut.
  6. Blitz until all combined and a syrupy mixture is left.
  7. Tip in a bowl and place the remaining coconut on a plate
  8. Take the balls out of the freezer, dip in the chocolate, roll in the coconut and once they’re all coated, return to the freezer for 10 minutes.

These will keep for 2-3 days in an airtight container in the fridge… although if I’m honest you’ll be lucky if they last longer than an hour.
